The California Enchilada Cafe’s menu has some often repeated words.
Of course, “enchilada” appears many times because of the chicken, beef, cheese, bean, and potato enchilada options that are the mainstay of the new cafe in the food court of The Mall on Evergreen Parkway.
A close second is “Grandma.”
Once Charlene Utley-Hall decided to start her California Enchilada Cafe, she knew the right person to ask for a little help.
When she told her grandmother Margie Aragon in Santa Barbara, Calif., she was starting a takeout enchilada business that would take in person and online orders, Aragon signed on for a two and a half week visit to Lebanon.
